Made with raw whole milk in an entirely human-powered process in small quantities, this cheese, made since 1882 by the oldest cheese factory in the U.S., is perfect for snacks, sandwiches, and cooking. Each dated wheel is dressed in cheesecloth and crinoline, triple-coated in a mixture of beeswax and paraffin, and boxed. Crowley Colby gets sharper with age and is available in limited quantities. 2 1/2 lb. wheel.
