Made with raw milk, this farmstead cheese has a complex flavor that originates in the grasses the sheep eat on Woodcock Farms in beautiful Weston, the Vermont Country Store’s village. So we know these are happy sheep, gratefully producing the rich, fine milk—very high in protein and fat—that makes this cheese so special. Modeled after a French Shepherd's cheese, this Tomme has a creamy, soft texture akin to a Cheddar but with a natural rind. Aged 3 to 4 months—the cheese grows harder, drier, and stronger with age—it has a distinctive bite that lingers on the palate. 1 1/4 lb. wheel.
